Well, some don't, but I consider that a configuration error.

Empty FROM FROM are used for delivery failure notifications, read 
notifications and so on.

I know some cases where the senders request read receipts with every 
email, but their mail servers don't accept emails with empty MAIL FROM, 
so the read receipts won't reach the senders, but instead end up as 
undeliverable mail in the postmasters inbox.
